The Role

An amazing opportunity for a driven leader to manage the overall back-of-house operations and all personnel involved within a state of the art facility.

An integral role that will contribute to the success of operational delivery within the hospitality and catering function of a high profile Defence Base Services contract.

 

This role is Fulltime Permanent primarily based at RAAF, Edinburgh, working working hours that contribute to a positive lifestyle balance.

 

You responsibilities will include, but not limited to

  • Manage the preparation and delivery of meal services, including routine meals, in-flight rations, fresh field rations and Mess functions from production facilities
  • Train all food production personnel in Broadspectrum’s procedures and methods relating to food preparation and presentation, including those specific to religious meal service
  • Coordinate surge and emergency contingencies by assisting in the mobilisation of staff, equipment and facilities in accordance with Defence Force plans
  • Oversee quality, output and staffing of reporting chef(s)/sous chef(s)

 Skills and Experience: 

  • Australian recognised Commercial Cookery Certificate III, or above.
  • HACCP Level 3 certification.
  • Minimum of 3 years’ experience managing large commercial kitchens in a Head Chef role.
  • Solid understanding of contract management, people management, quality management systems and continuous improvement principles.
  • Sound knowledge of Food Safety Standards, relevant legislation and statutory obligations.
  • Strong planning and organisation skills and proven experience in collaborative and consultative processes at a professional level.

 

 The applicant for this role must be eligible to hold a Defence Security Clearance. As a result of this requirement the applicant must be an Australian Citizen.
